Roasted Chicken with Sweet Potatoes
Ingredients
For the Roast Chicken Quarters:
2 chicken quarters (leg and thigh)
Salt
1 teaspoon ground sumac
1 teaspoon smoked paprika
Fresh rosemary, thyme, garlic
For the Fried Sweet Potatoes:
2 large sweet potatoes, peeled and cut into 1/2-inch slices
Your favorite frying oil
1 cup goat cheese, crumbled
2 tablespoons honey
1 tablespoon finely chopped fresh herbs (such as thyme and rosemary)
For the Lemon Gochujang Tahini Spread:
1/4 cup tahini
1 tablespoon gochujang (Korean chili paste)
Juice of 2 lemons
Salt, to taste
For the Serrano Pepper and Cilantro Oil:
1 cup olive oil
1 serrano pepper
1 Bunch cilantro, with stems
Salt, to taste
Instructions
Roast Chicken Quarters:
Preheat your oven to 450.
French the drumette.
Season the chicken quarters with salt, pepper, smoked paprika, and sumac. Drizzle your best pan with olive oil.
Pan sear your chicken skin side down until golden. Flip and cook another 5/7 mins.
Place in your oven and roast for about 15/20 minutes (165 internal)
Take out of your oven and finish in your pan basting with butter, rosemary, thyme, and garlic.
Fried Sweet Potatoes:
Heat vegetable oil in a deep fryer or large pan to 300°F.
Fry sweet potato slices in batches until done and completely cool.
Up your oil heat to 375 and fry until golden brown and crispy, about 3-4 minutes. Drain on paper towels and season with salt.
In a small bowl, combine the your sweet potatoes with goat cheese, honey, chopped herbs, salt and pepper. Set aside.
Lemon Gochujang Tahini Spread:
In a deli quart (or bowl) blend together tahini, gochujang, lemon juice, and salt until smooth. Adjust seasoning as needed.
Serrano Pepper and Cilantro Oil:
Blend serrano pepper and cilantro with a hand blender and strain through cheese cloth or mesh strainer. If you want to be even more consumed by time, settle in a piping bag and separate the oil that way. Google it idk. Set aside in squeeze bottle.
Assembly:
On a serving plate, smear tahini spread as you’d like.
Place dressed sweet potatoes and dress with more goat cheese if preferred.
Place the roast chicken quarter on top, with the drumstick adding height.
Drizzle the serrano pepper and cilantro oil around the plate.
Garnish with microgreens, or cilantro.
