Miso & Brown Butter Cookies
Yield: 5-6 Large Cookies
Ingredients:
1¼ cups (150 g) all-purpose flour
½ tsp. baking soda
½ cup (113 g/1 Stick) unsalted butter
½ cup (100 g) dark brown sugar
¼ cup (50 g) granulated sugar
1 Tbsp. red miso
1 tsp. raw agave nectar
1 tsp. kosher salt
1 large egg, at room temperature
1 Tbsp. vanilla paste
Flaky Maldon sea salt for sprinkling
Directions:
Prep Dry Ingredients: In a small mixing bowl, whisk together 1¼ cups all-purpose flour and ½ tsp. baking soda. Set aside.
Brown the Butter: In a skillet, melt ½ cup unsalted butter over medium heat. Swirl and scrape the pan frequently with a heatproof spatula until the butter foams, then turns golden brown (about 4 minutes). Transfer the browned butter into a large heatproof mixing bowl and cool for 1 minute.
Combine Wet Ingredients: To the bowl with browned butter, add ½ cup dark brown sugar, ¼ cup granulated sugar, 1 Tbsp. red miso, and 1 tsp. kosher salt. Whisk vigorously to break up any sugar clumps and ensure the mixture is smooth. Whisk in 1 large room-temperature egg and 1 tsp. vanilla paste until well combined.
Incorporate Dry into Wet: Gradually sift in the dry ingredients to the wet mixture in 2 or 3 additions, stirring until just combined. Cover the dough and chill in the refrigerator for at least 30 minutes, or up to a day for flavors to meld.
Bake Cookies: Preheat your oven to 350°F (177°C). Line two rimmed baking sheets with parchment paper. Using a #6 (Large) ice cream scoop, portion the dough onto the prepared baking sheets, spacing them at least 2 inches apart. Lightly sprinkle each cookie with flaky Maldon sea salt.
Final Baking Steps: Bake the cookies, switching the position of the baking sheets halfway through (front to back and top to bottom), until they are golden around the edges, about 14–16 minutes. After removing from the oven, gently press down on the cookies with a spatula to flatten slightly. Allow them to cool on the baking sheets for 5–10 minutes, then transfer to wire racks to cool completely.
